Anyone have toddler-friendly veggie recipes?
My 4yr. old has to eat a completely meat-free diet due to a metabolic disorder. My problem is he doesn’t care for vegetables at all. Does anyone have any good vegetarian recipes that might appeal to a toddler?

“How it All Vegan” by Sarah Kramer and Tanya Barnard has a section on feeding vegan kids (even though neither is a mom). Dreena Burton’s “Vive le Vegan” has a section on feeding vegan kids. You can also Google vegetarian family, and I think there are websites for that. And www.vegweb.com also has a section with kid-friendly recipes.
If your son likes pizza, try scattering the veggies on pizza. You could also shred them and make fritters with them. Get him involved in the cooking as much as possible.

Avocado smoothies. One ripe avocado, throw the seed, put into the blender, mixed your child’s milk formula with very less water possible, pour into the blender and blend together. For adult, I will prefer to mix with full cream fresh milk and brown sugar, um…… So delicious and nutricious
