Chicken recipes?

What are some HEALTHY chicken recipes. I love chicken, but it gets boring after a while just eating baked chicken breasts. Help me out!

We love chicken taco’s or chicken fajitas or chicken & dumplings or chicken soup and I grew up with sweet & sour chicken which is easy and my son loves chicken breast sbaked with ragu sauce and grated italian cheese on top !

Golden Chicken With Noodles

Prep: 5 minutes Cook: 7 to 8 hours

Makes: 8 servings

2 cans (10 3/4 ounces each) Campbell’s Cream of Chicken Soup (Regular or 98% Fat Free)

1/2 cup water

1/4 cup lemon juice

1 tablespoon Dijon mustard

1 1/2 teaspoons garlic powder

8 large carrots, thickly sliced

8 skinless, boneless chicken breasts

4 cups medium egg noodles, cooked and drained

Chopped fresh parsley

1. Stir soup, water, lemon juice, mustard, garlic powder and carrots in 3 1/2-quart slow cooker. Add chicken and turn to coat.

2. Cover and cook on LOW 7 to 8 hours (or on HIGH 4 to 5 hours) or until chicken is cooked through. Serve with noodles. Sprinkle with parsley.

Do you know of any simple and healthy Chicken recipes?

I only have basic ingredients, and I want to make a healthy chicken dish, which is also quite easy to cook.

I have a small shop next door that sells a few ingredients, but would rather not drive all the way to the supermarket.

Barbeque Chicken Recipe

It is so simple and utterly delectable.

This recipe is cooked in a skillet, but you could adapt it for the grill or barbeque very easily and serve it in summer as one of your spicy grilled chicken recipes. At Step 5 allow the chicken slivers to marinade for a few hours, then grill or barbeque.

# Easy
# Preparation time: 5 minutes
# Cooking time: 20 minutes
# Serves 4 – 6

Ingredients:

# 1lb 120z / 800g boneless skinless chicken breasts
# 1 medium onion, finely diced
# 2 cloves garlic, crushed
# 1 cup tomato ketchup
# 2 tablespoons tomato paste
# 2 tablespoons cider vinegar
# 1 tablespoon Worcestershire sauce
# 1 teaspoon dry (English) mustard
# 1 teaspoon cayenne pepper
# 1 teaspoon paprika
# ½ cup water – if necessary
# oil for shallow frying

Method:

1. Cut the chicken breasts into long slivers. Set aside.
2. In a large frying pan or skillet, fry the onion in a little oil until it is soft and slightly brown.
3. Add the garlic and fry for another minute.
4. Add the remaining ingredients, except the water. Cook for about 10 minutes.
5. Add the chicken slivers to the sauce. Add water if the sauce is too dry.
6. Cook for about 5 – 7 minutes until the chicken is cooked through.
7. Serve on a bed of salad leaves.
