Your Questions About Vegetable Recipes Food Network

Helen asks…
I saw this recipe on the Anne Burrell TV show on the food network channel. I learned about this?
technique that has aroused my curiosity. Can anyone enlighten me as to what this technique is? The short ribs are braised and a number of fresh vegetables are pureed in a food processor and then added to the pot to brown and then scrape up, allowed to brown again, and scrape up, and finally the whole dish braises for 3 hours. I would like to try this dish but want to do a little more research before I begin. Here’s the recipe I’m referring to…

Hoping to hear from some professionals… maybe…
The puree process of the vegetables is what intrigues me. Does this give extra rich flavor to the end process? Where can I find more recipes like this? Or get more insight to using a process like this? Any foodie blogs or sites??

Bill Johnson answers:
I am sure this is to give flavor and thickness to the sauce the ribs will simmer in. I have never heard of doing it quite like this however. Any recipe I have seen called for browning the vegetables in the meat drippings until soft, and then pureeing. I would think this would make a real mess in your pan potentially, but these people on television do not have to wash their own dishes. It sounds like a good recipe, but if I did it, I would saute the whole vegetables, then puree them with the tomato paste and then pour back into the pan, but it does sound good.

Bill Johnson answers:
I smell a red herring.
Did NO ONE notice that this question originated on Yahoo!Answers INDIA? They don’t eat cows/beef in India, as they are considered sacred. They also are not likely to eat pork as there is a large Muslim population there. Lamb, chicken and fish are much more likely.

I found a Gold Mine for you. There is a line in your Q that has me a little uneasy, “he’ll be able to tell if they aren’t good”, I wouldn’t serve anything that I think isn’t good, I’m the guinea pig, not my family. Please enjoy with him:

Let them help you slice the zucchini and they might be more inclined to eat it..we like to cut it in long strips and fry in 1 tsp butter 1 tsp olive oil salt and pepper on med heat..then let the kids top with their favorite cheese..mine liked Parmesan and mozzarella on his. Cook till just browned a bit.

Bill Johnson answers:
Cheddar Zucchini Casserole
2 pounds zucchini, sliced (approximately 6 cups)
salt and pepper
1 cup sour cream
2 eggs, divided
2 tablespoons flour
1 1/2 cups Cheddar cheese, shredded
6 slices bacon, cooked until crisp, drained, crumbled
1/2 cup bread crumbs
1 tablespoon melted butter
PREPARATION:
Cook zucchini in a small amount of salted water until tender, about 15 minutes. Drain and sprinkle with salt and pepper.
In a medium bowl, sightly beat egg yolks; stir in sour cream and flour. In another bowl, beat egg whites until stiff; fold into the sour cream mixture.
In a baking dish, about 12 x 7-inches, layer half of the zucchini, half of the sour cream mixture, and half the Cheddar cheese; sprinkle with all of the crumbled bacon. Repeat layers of zucchini, sour cream mixture, and cheese. Toss bread crumbs with melted butter; sprinkle over the top of the casserole. Bake, uncovered, at 350° for 20 to 25 minutes.
Serves 6 to 8.

Campfire recipes for two?
I’m taking my boyfriend on a picnic by the lake for our last anniversary before he leaves for the Navy, and at the park, they have campfire grill-type things.. I’d really like to make him something, and I have appetizer and dessert ideas ready, I just don’t know what to make.
What sorts of things can you do with that? I’m a pretty good cook, so I can whip up some good stuff, but I just need easy to prepare things that we’ll both enjoy.
Thanks. =)
Oh, and mountain pies are out of the question. I want like, meat or something, real food, hahahahaha. =P

Bill Johnson answers:
Well there are a number of things, But if he is leaving for the Navy, do him a big favor visit your local butcher shop and buy a couple extra thick steaks(Rib eye,Ny Strip,Porterhouse,T Bone Or Fillet Mignon which ever is his FAV If he is serving his country he deserves a nice thick steak!) Grill to desired done ness over Charcoal I recommend about 5 to 8 mins on each side, Only turn the steak once!!!! (just my preference) You can also Light the coals and put Potatoes wrapped in tin foil right on the coals do this as soon as you light the coals cause they take about 45 mins to an hour.
